SIMPLE, DELICIOUS PANCAKES



These pancakes are scrumptious.  Whip them up in less then 30 minutes and treat yourself!  I love waking up in the morning to the smell of pancakes, so this morning I decided to whip up this rendition of simple but incredibly delicious pancakes.  


Makes 12.
 PART 1 
1 1/2 cups milk
1 egg
2 teaspoons vanilla extract
2 cups self-raising flour
1/4 teaspoon bicarbonate of soda
1/3 cup caster sugar
25g butter, melted

Pour milk, egg and vanilla into a bowl and whisk.

Using a sifter, mix bicarbonate of soda and flour into a seperate bowl.  Mix in the sugar.  

Make a well in the centre and add milk, egg and vanilla mixture.

Stir until just combined.

PART 2
Heat a frying pan on medium heat.  For a healthier alternative to butter, dash around 1 teaspoon of coconut oil on to the pan.  Plop your pancakes onto the pan using a 1/4 cup measurement and wait to flip until bubbles begin to appear on the surface of the pancakes. 


PART 3
Topping suggestions:

lemon/lime juice & sugar 
maple syrup
honey
bananas 
berry juice 
Greek yogurt
